Alton Brown's Tips For Perfect Pancakes

At his Kidz Kitchen demonstration at the NYC Wine and Food Festival, Alton Brown not only answered audience members questions, but he taught the eager crowd how to make a kid-friendly dish, a pancake cake with a slime-like avocado frosting. Here are his tips for making the most delicious pancakes:

Always weigh out the dry ingredients. It's especially important to weigh out the flour which can become very compact.
For the best batter consistency, use both all-purpose and cake flours.
If using baking soda include an acidic ingredient in the wet mixture. Brown likes buttermilk.
To create your own pancake mix, measure several batches of the dry ingredients. Keep stored in air-tight container. Shake to combine before using the pancake mix.
Don't overbeat. The batter should be lumpy.
Be patient! When bubbles form around the edges of the cake and the center looks firm and set, carefully pick up with a spatula and flip over.

A little while back, YumSugar tasted and reviewed Batter Blaster, the pancake batter in a bottle. While she used the squirt-able batter to make surprisingly good-tasting pancakes, our friends at Grocery Eats recently used their batter blaster to make deep-fried pancakes. At first glance, these crispy pancakes look like delicious funnel cakes. But reading the fine print, one can see they are incredibly oily. I would probably eat one, Paula Deen would probably eat a bunch, but how about you? Would you eat this deep-fried pancake stack? Source

Recall Warning: Salmonella and Listeria, Oh Boy!

Seems that sprouts aren't the only thing being recalled due to salmonella bacteria. This time it's batches of Aunt Jemima Pancake and Waffle Mix: Original, Original Complete, and Buttermilk Complete. According to Aunt Jemima folks, there is only a health risk if it's consumed raw or undercooked. At this time, no illnesses have been reported.

The products — both two and five pound boxes — have best before dates of FEB 08 09 H through FEB 16 09 H stamped on top. The UPC codes are:

Even though national pancake day was last Tuesday — it's always on Shrove Tuesday aka Fat Tuesday — the folks at IHOP decided to have their pancake day today. This year's pancake day happened to fall on Super Tuesday and instead of competing, IHOP decided to hold their pancake day today. So from 7am to 10pm, you can get one free stack of buttermilk pancakes. That's right, completely free! The only catch is that they ask you to consider making a donation to support the Children's Miracle Network. Their goal is to raise $750,000, so get out there and have a stack!

Fargo Made a Lot of Pancakes, Ya Know

This weekend, the folks of Fargo, North Dakota, decided they wanted to be famous for something other than being the setting for a Coen Brothers' film. So this past Saturday, the folks of Fargo got themselves in the Guinness Book of World Records. To celebrate the 50th anniversary of the Fargo Kiwanis Club's Pancake Karnivale, the Kiwanis club members and volunteers served up 34,818 pancakes, making them the largest pancake feed in the world. This bested the former world record holder — The Lions Club of Lubbock, Texas — by more than 4,000 pancakes. Personally I think this beats those "world's largest" records, because at least it doesn't seem like a huge waste of food. On the downside, I'd hate to be there for cleanup duty. What do you guys think of this pancake feeding frenzy?

Batter Blaster Blasts Away My Expectations

I was perusing the dairy section of my local Whole Foods Market when something caught my eye. There, on the top shelf, glinting like a jewel, was Organic Batter Blaster. At first I thought, WHAT??? WHY IS THIS HERE? I thought Batter Blaster would end up as one of those weird products — like HeadOn — that you hear about but never see. Then, once the shock wore off, I remembered that I was at Whole Foods, and that they have a pretty high standard when it comes to products they sell. So I did what every other foodie would have done: I picked up a can and put it in my cart.

Let me say right now, this product is surprisingly good. I was highly skeptical, and a bit worried by it, however, in the end it won me over. The batter itself oozes out of the can — I was expecting more of a high-powered spray like whip cream — and is a little difficult to shape, but not impossible. The flavor is like your standard fluffy pancake, only a tad sweeter. I've definitely had much, much worse at diners across America.

Would I buy this product again? Probably not, however I could see where it would come in handy. In just a few short minutes, we were eating our fill of pancakes. If I were a hungover college student or a busy mom, and just wanted to have decent tasting pancakes for myself or my brood, then it would definitely make sense. The ingredient list didn't look too weird — the first two ingredients are filtered water and organic wheat flour — they were super simple to make, and as the checkout guy at Whole Foods said, "Hey, sometimes you just want one pancake."

I just recently came across a "fantastic" new product called Batter Blaster. Instead of whipping up your own pancake batter, or even using the just add water kind, you just shake, point, blast and cook. I don't know about you guys, but I think this is a bit ridiculous. You know it's happened to you before. You're sitting there trying to pay attention to your favorite TV show when WHAM! the craving hits you. There on the screen, your favorite characters are eating something and wow oh wow, you WANT it. No, you NEED it.

Well, don't worry, you're not a freak, this has happened to me plenty of times. In fact it's happened several times this season during CBS's How I Met Your Mother (which, I have to agree with Pop, is one of the best shows out there). See, on the show, Lily and Marshall have a weekly pancake day, and after Lily left for San Francisco, Marshall had to learn to make his own pancakes. I figured if Marshall could do it, then so could I.
