
Lavash
A type of bread with Armenian origins. This soft, thin flatbread is made with flour, water, and salt. When fresh, lavash is soft like a tortilla.

Baba Ghanoush/Gannoujh, pronounced bah-bah gah-noosh
A typical Middle Eastern appetizer. This spread or dip is made of pureed eggplant,
tahini, olive oil, lemon juice, and garlic. Served with pita or flatbread, it's garnished with pomegranate seeds, fresh mint, or minced pistachios.

Tahini
Typically used in Middle Eastern cooking, a thick paste made from ground sesame seeds that commonly seasons dips, sauces, spreads, and other dishes such as hummus. Its consistency is thinner than peanut butter and it can be found in health food stores and the ethnic section of most grocery stores. Tahini comes in a variety of forms from a sweetened darker version to fresh, in cans, in jars, or dehydrated.

Earth Day, I thought I would give you a healthy yet super tasty 100% vegan side dish. Tabouleh is a type of salad similar to couscous with a bulgar wheat grain that is typical of Middle Eastern cooking. It is usually served cold, and makes an excellent picnic-style side.
