52 Weeks of Baking: Rich, Fudgy Brownies

This week YumJimmy asked if I could bake something that he would like. In other words, he wanted to know if I could bake something containing a lot of chocolate and not much else. Initially I thought I'd make cupcakes, but have already baked great chocolate ones this year. So after about two seconds more of thought, I decided to treat him to a batch of super-rich brownies. Rich Fudgy Brownies
From Nicole Rees in Fine Cooking

8 oz (1 cup) unsalted butter plus enough softened unsalted butter to grease the pan
3 oz (2/3 cup) unbleached all-purpose flour plus enough to line the pan
2 cups granulated sugar
4 large room temperature eggs [this seriously makes a difference]
1/2 tsp vanilla extract
2 1/2 oz (3/4 cup) unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp table salt

  1. Position rack in center of oven and heat to 350F.
  2. Butter and flour a 9" square pan, tapping out excess flour. [I decided to use cocoa powder instead of flour.]
  3. Melt butter in medium saucepan over medium heat.
  4. Remove pan from heat - whisk or stir in sugar, followed by all four eggs and vanilla.
  5. Stir in flour, cocoa, baking powder and salt. Go slowly to keep the ingredients from flying out of the pan. Stir until smooth and uniform.
  6. Spread batter into prepared baking pan, smoothing so it fills the pan evenly.
  7. Bake until a toothpick or skewer comes out clean (there will be a few clumps clinging to it) — this will take about 40 minutes.
  8. Let brownies cool completely in the pan on a rack.

    You are psychic. Here I was, procrastinating, thinking wouldn't it be nice to have brownies today? But I don't have a very good recipe, I lamented. Now I will have to make brownies, which will leave me no time for my run and I'll just get fatter! Oh, well, those brownies look like they're worth it!

    Wowzerz!!! Yum, my mouth is drooling! I'm having one of those craving-sugar-in-the-afternoon moment (and I don't mean team, pop, or yum! lol... Eye-wink) Wow, I mean, really Yum, these look so delish! I am definitely a chocolate girl through and through, so you can bet I'll definitely attempt these VERY soon! Laughing out loud

    ok. so i was going to make the coconut brownie bars from yesterday to take to the beach, but maybe i will make this instead.......i don't think i would need to buy anything but butter...perhaps more cocoa i don't know how much i have....

    I have a really similar recipe and the stovetop method makes them excellent. Mine calls for the dry ingredients to be sifted in and that makes it easy to blend and nothing flies away (I think mine has milk though so you alternate).

    Another nice option is to brush the brownies with 1/4 cup of a cream liquor when they're still warm. Bailey's and chocolate, so good...

    CS - long time no see! It makes a 9x9 pan, so it depends on how big you cut them. Anywhere between 1 and 16 is where I usually end up Eye-wink

    tshelly - someday I will try. I just haven't had the time to do a several day long project. but hopefully before the 52 weeks are up!

    If you do get to making some - I am SO positive they'll be soooo tasty and amazing Laughing out loud I'm keeping my fingers crossed to hopefully see them before the year is over!

    If you want to take it one step further, make a cocoa/powdered sugar glaze (easy to find) but use Bailey's instead of milk and a little vanilla, drizzle/frost when cool. And brush with Bailey's when warm. They're not too boozy, just really good!

    Those look totally moist and yummy! I was going to make them tonight but I'm out of eggs! Boo! I will hit the store tomorrow - but first I will check out the recipe for the ice cream sandwiches using these! Yum!

    I made these the other night. They stayed in the oven for abotu 30 minutes before I checked them (my oven runs hot) and I think I would only leave them in for 25 minutes in the future.

    I glazed them with Cointreau and the orange bite was really nice with the chocolatey-ness of the brownies.

    One word to the wise: make sure the saucepan in which you are melting the butter has time to cool before you add the eggs, otherwise you will end up with little bits of cooked egg whites floating in your mixture!

    I will deffinately be trying this recipie. I use my mums old one and sometimes the brownies taste a bit..eggy.. sor of like metal. I cant explain it. But looking at these made my mouth water!
