You Put Peanut Butter In My Cookie!

Believe it or not, today is another one of those "who came up with this holiday" days! This time it's National Peanut Butter Cookie day and ooohwee, I am excited about this one! Although my personal favorite is chocolate chip, I have been known to dig in to my fair share of their peanut butter cousin. Old-Fashioned Peanut Butter Cookies
From Bon Appetit January 1998

3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup creamy or chunky peanut butter (do not use old-fashioned style or freshly ground)
2 teaspoons vanilla extract
1 cup (packed) golden brown sugar
1 cup sugar
2 large eggs

  1. Preheat oven to 350°F.
  2. Line 2 large baking sheets with parchment paper.
  3. Mix flour, baking powder and salt in medium bowl.
  4. Using electric mixer, beat butter, peanut butter and vanilla in large bowl until well blended. Beat in both sugars. Scrape down sides of bowl.
  5. Stir half of dry ingredients into mixture.
  6. Add eggs 1 at a time, stirring well after each addition.
  7. Mix in remaining dry ingredients.
  8. For each cookie, roll 1 heaping tablespoonful of dough into 1 3/4-inch-diameter ball.
  9. Arrange dough balls 2 1/2 inches apart on prepared baking sheets.
  10. Using back of fork, flatten dough balls and form crosshatch design on tops.
  11. Bake cookies until dry on top and golden brown on bottom, about 14 minutes.
  12. Cool cookies on baking sheets 5 minutes.
  13. Using metal spatula, transfer cookies to racks and cool completely. (Can be prepared up to 3 days ahead. Store in airtight container at room temperature.)

    oh yes!!!!! good good times! especially with a herhey's kiss in the center! wasn't there a day for those cookies too? lol

    PB cookies are my all time favorites!! My mom used to make them homemade like this all the time when I was little. When I got old enough she even let me put the fork-prong marks in the cookies lol!

    how come the cookies in the pics don't have fork prong marks criss-crossing? it juest doesn't look right! haha

    too much PB hurts my tummy. but ironically, i just had peanut butter on wheat bread and the jar is in front of me on my desk right now!! and my boyfriend was suggesting (whining) that i should bake him something. hmm. is this a sign?

    I used to love making PB cookies because my mom let me do the hash marks with the fork and I just thought that was the coolest thing ever!
