What Would You Make?

Here's the scenario: you are at home and hungry for food. You have to cook up something scrumptious for you and your boyfriend/girlfriend/ spouse/child/friend, but the ingredients you have on hand are limited.

You have cream cheese, fresh lemons, and salt. Using these products, along with whatever you currently have on hand in your cupboard and refrigerator, what would you make?

  1. I would start by removing the crusts on white sandwich bread. Next I would cut the bread into triangles and toast it in a 350°F oven for 8-10 minutes.
  2. Meanwhile I would take the cream cheese — which I had let sit out on the counter so it's softened — and mix it with capers, lemon juice, salt, pepper, and lemon zest.
  3. I would spread this mixture on the toast and top it with smoked salmon. Voila! Instant appetizer, especially when served with chilled sparkling wine!

    I would cut up some tomatoes and sprinkle them with salt. Next I would take the cream cheese, spread it on some melba toast and chop fresh chives to sprinkle on top. Then I would cut up the lemons and squeeze them into glasses of sparkling water.

    One of my new faves!

    I sauté onion in a skillet with olive oil or butter. Then I add medallions of raw chicken, capers, lemon juice, salt and pepper. When it is cooked or almost cooked, I add a hunk of cream cheese (not enough to make it REALLY saucy, but just to coat the chicken and have a little to drizzle on the side) and let it all cook until the cream cheese is melted thoroughly. If I need to thin it out some I add half and half.

    Then serve with cous cous (or pasta if I don't have cous cous)!

    With what I have in the fridge also: I would make extra creamy garlic mashed potatoes using a bit of the cream cheese and salt. And baked lemon chicken with rosemary. Green beans with lemon zest, thyme and butter. It's cold and rainy here and that sounds so comforting!

    I have fish on hand... so I'd prbably make a fish tart with some pastry dough. I'd spread the cream cheese on the dough top that with the fish and some capers, salt it and add lemon after it's cooked. voila!

    Creamy lemon linguini sauce, using evoo, one garlic clove, lemon zest, lemon juice, one container of cream cheese, salt and some of the pasta water to make a nice sauce. I might throw in a few shrimp too.

    I'd make Gingerbread Bars with cream cheese and lemon icing. I always have a box of gingerbreak mix in the cabinet, so I'd bake that and add the following homemade icing:

    Soften the cream cheese
    1/2 cup sugar
    Juice from two fresh lemons
    1 teaspoon Vanilla Extract

    Spread on top of gingerbread. Smiling

    Polish Pancakes!
    Soften the Philly and mix with lemon juice, zest, raisins, sugar and vanilla.
    Make some pancakes (English version - like crepes)
    Spread the one on the other and roll up
    Yum!

    I'm thinking decent strawberries at the market for this dip recipe. In these parts, that will be several months from now! Sad

    Blend 1 part softened cream cheese with 1 part softened mascarpone. Mix in a splash of fresh lemon juice, a bit of sugar, some ceylon cinnamon, perhaps a dash of nutmeg, a tiny splash of pure vanilla extract, and just the slightest pinch of salt. If you want to get all fancy-pants, garnish the dip bowl with lemon zest shavings and a bit of fresh mint.

    CORRECTION:

    1 part cream cheese to 1 part sour cream.

    Everyone has a brain fart now and then! Eye-wink
